What a day. It’s a bloody good job I love my work, that’s all I’m saying.
I left work late so a quick tea was in order. Homemade chips, Lidl fish cakes and tarty sauce (my version of tartar).
Trying to shop at Lidl or Aldi and I can most certainly recommend Lidl’s fish cakes. It’s a standard bake for 30 mins and enjoy.
Salt and pepper chips
2 medium potatoes
Salt and pepper to taste
1 tablespoon of Sunflower oil.
Leave the skins on, makes it a little more rustic and cut in to chunky chips (or shapes of your choice if chopping ain’t your bag, just make sure they’re pretty even). Put them in a microwave friendly bowl with a drop of water and blast for 3-5 mins to soften a little.
Drain and season with the salt, pepper and oil. Put in the over and bake for 35 mins. Take them out when they are a little puffy and golden brown. Eat with my tarty sauce for a treat with fish!
Tarty sauce
This is very much a cupboard recipe of luck. I guessed and it worked.
5 small gherkins chopped finely
3 silverskin pickled onions
3 basil leaves (parsley would be best)
Freshly ground pepper
2 large spoonfuls of mayo
Basically mix and enjoy. Sooo quick and yummy, I don’t need to explain any more!
