Peppermint Crispy Crunch & Village News

I’m in to preparing snacks at the moment, and following my recipe for energy balls yesterday I gave another couple of recipes the once over this morning. I managed to stock up my freezer and fridge with low cal snacks.

One of our faves at the moment is a peppermint crispy crunch bar. So easy to make and low calorie to boot. I used a loaf tin to make my crispy crunch in, but use what ever is good for you. I’m all about the improv here!

Ingredients (7 serves at 80 cals per serve)

50g Dark Chocoalte (I used 72%)

1 Table Spoon of Coconut Oil

1 Table Spoon of Honey

1 & 1/4 Cups of Puffed Rice

2 Table Spoons of Desiccated Coconut

Method

Melt the coconut oil, chocolate and honey together in a bowl over a simmering pan of water (bain marie).

Mix together the desiccated coconut and puffed rice, then pour over the glossy chocolate combo. Coat all the dry ingredients thoroughly with the chocolate combo. Once mixed, put in to your choice of pan. For this I used a loaf tin lined with cling film with enough over hang to cover the top of the mixture. Press the mix down into the tin till the rice puffs crush slightly, this will ensure that it all sticks together. Set for a few hours in the fridge and cut in to 7 bars/chunks/shapes of your choosing and enjoy with a cuppa.

In other news, we’ve just had a riot of sirens all around us and an air ambulance over head.

Source’s say that there has been a head on collision close to where we live. I believe it was a police chase with drug dealers. An entire section of road has been taped off. Ambulance, police and fire services are all at the scene attempting to cut a young woman out of a car. I’m hoping that no-one is seriously hurt, especially the victim. There’s another load of victims from what started out as a petty crime in our village. (Picture not my own).

The impact on the families surrounding this incident will be immense. Sending warm and well wishes to anyone involved.

Milk

I’m avoiding milk.

Monday is my weighing day, and although I’ve lost inches my weight was the same as last week. I highly doubt that it is the same. I was bloated and have been all day and the only thing I can attribute this to is the hot chocolate I had last night which was made with cow’s milk rather than almond milk. So I’m disregarding cow’s milk from my diet in hope to resolve the issue. I hate being bloated.

The after math of no number shift on the scales was a bad mood. I’m truly behaving. I’m not eating anything processed or high cal, I’m drinking tons of water and herbal tea over anything caffeinated. So bloating can do one. I really don’t there are too many benefits from cows mill anyway. The more I read, the more I think it’s best to kick it to the curb. So here goes.

Under a mountain of washing and a building aneixty (family interferences), Delilah and I survived the day. I’m wishing those teeth of hers make an appearance and stop disrupting my happy go lucky girl. She’s being a right grump. Napping more than normal, off her food but drinking more milk again and just more difficult in general. Come on teeth, where are you?!

I have to prep some snacks for the rest of the week. My choice is mint choc crunch and energy balls.

Energy Balls

50grams of Oats

50g of shredded coconut

180g of pitted dried dates

Add everything to a food processor and blitz. The mixture will be crumbly but tacky enough to hold together when pressed in to balls. Divide the mix in to 6 balls, one ball is approx 185 cals.

Day 1 Of Motivating My Own A*se

It is about time I got my backside in gear and got rid of the excess baby weight. Today was day 1 of changing my mindset and hopefully in turn my life style.

I got in a ten minute yoga sequence from Pinterest. I enjoy yoga, but my flexibility isn’t what it used to be. I’ll try keep this up to get my flex back. Maybe mix it up with a different sequence each morning. It’s rather inspiring to find a different workout every so often.

My second workout was through a website/ app I’ve been following. It’s recently come to the UK and I’ve been lucky enough to trial it and be a Motivating Mum. Basically I help promote, by sharing features of the app and the meals I’ve been cooking and workouts I use. This has been great, and I genuinely adore the app and the Facebook community is great, always supporting you. Since January I’ve had a fair few up and downs, so even though I’ve been using the recipes I’ve been inconsistent with my workouts and eating processed food in between, chocolate, cake and all the wrong stuff. So in the process of all this, I’ve lost weight but not as much as I could have.

I digress.

The healthy Mummy App is so good as is their website. There are many options for workouts, but today I did a 30 min legs cicuit workout and after the high jumps and jumping squats my legs were like ‘whoa, didn’t know we could do that’. Then came walking down the stairs. Who knew a home workout could give you jelly legs. I considered going down the stairs on my bum at one point, but struggled through.

Food has been good. No treats, all ‘clean’ food and plenty of water. So day 1 has gone pretty well. Even managed to use up leftover beef for the stir fry tonight along with a ton of veg nearing it’s best. Even made some energy balls which consist of 3 ingredients and are pretty tasty and satisfying for that sweet tooth.

Hoping my will power can do day 2 justice also. I so want to get back in to my yellow dress for Delilah’s first birthday in August.

Mirror Glaze Mousse Cake

Firstly happy freaking Easter! From us to you, we’re sending each one of you warm wishes.

Our annual family Easter bake off came today. Always a pleasure to spend time in the company of family. Roast beef dinner with all the trimmings cooked by mum. Puds covered by us, the kids.

Ollie and Kristy made cheesecakes in Easter eggs – oh my goodness.

Amy and Charlie created a chocolate orange cheesecake. Which tasted divine with all is orangey chocolate goodness and the WINNERS of this year’s bake off. Well done guys. This was so good.

Then Lee bob, made some amazing protein bars. Lee is mega in to his health and fitness and I need to get the recipe for these bad boys because I’m going sugar detox tomorrow.

Man and I made the mirror glaze mousse cake. I’ve been dying to give a mirror glaze a go and I finally had an excuse. I was so excited to try out this idea I had butterflies when I got to the glaze part. How sad is that.

I used this link for the recipe. It was pretty good. I kept it in the freezer overnight and made the glaze the night before and heated it this morning to pour over.

So loved making this cake. Have a go. I urge you to try it.

Master of Bake Off

Two years running man and I have ruled our family Easter bake off. Can we make it a third?

The first year man swooped in with a salted caramel cheesecake. Everyone just died.

Last year we made a giant jaffa cake and other than the chocolate wasn’t shiny on top, it was delish!

This year, I’m trying something completely different. A mirror glaze, white chocolate mousse cake with a black forest jelly and chocolate sponge filling. No pics yet. The mirror glaze is ready to pour, but I’m not doing it till the morning. The mousse cake part is setting in the freezer. I’m so freaking excited. There will be pictures tomorrow and a link to the recipe I followed if all goes well.

It’s been really good to have something to concentrate on today. An excuse to get my creative bake on.

Banana Pancakes

Today has been a day of nothingness and finding a new addiction. Luther. Yes, I know I’m behind the times, but we most definitely made up for that today. The entire first season in an afternoon. We are taking a break for him to Minecraft and me to hastily post up the pancake recipe. I have views to continue with at least one more episode of my new compulsion. Or maybe that can be my reward for getting ready for work, ironing clothes ect. The important bits that nobody want to do.

Here it is, tried and tested just today. Flourless, 3 ingredient pancakes. Easy, yummy and by making these I have used up 90% of the very ripe banana’s in the house. Only two left to inventively throw into some other concoction.

Easy as Sunday mornings, considerably apt for a Sunday morning.

Banana Pancakes

Ingredients
2 Ripe Bananas
2 Eggs
½ Tsp of Baking Powder

Whisk the eggs together with a fork and set to one side. With the back of the fork, just like we did for the mini banana bites, mash up the two ripe bananas then add in to the whisked eggs. Add the baking powder and whisk together thoroughly.

For cooking these little delights, I used a non-stick pan and no oil. If you don’t have a non-stick pan, use a regular one and a flavourless oil, coconut or something along those lines will do the trick. On cooking my first pancake I found that the colour is dark due to the natural sugars in the banana. Don’t panic if they look somewhat darker than normal pancakes. Unlike regular pancakes, they wrinkled and tended not to turn easily.

Man and I enjoyed them with a swirl of melted smooth peanut butter and Nutella. Can’t really beat that combo. Banana, chocolate and peanuts. An indulgent breakfast, but very controlled.

An update on my betrayal; It’s okay and I’ve let it go. Because guess what? I can. The mantra for the year, the one I will live by in 2016 is “I can, I will”. It is purely as simple as that.

Mini Banana Bites & Betryal

Since starting a new year with a brand new healthy version of myself (Lotty 2.16), I have been minimalistic with the carbs and high in fruit and veg. This week my new healthy lifestyle has left me with an abundance of overly ripe bananas. Eight overly ripe bananas to be precise. Not wanting to waste these fermenting sugary beauties, I did a little research to find out what I could make apart from the blatantly obvious ‘Banana Loaf’; I don’t have an aversion to banana loaf, but it seems to be the most go to recipe.

Now I did try two different recipes out. But my banana based brownies need some work before I let that one go public. Not quite ready for the exposure of the internet. The mini banana bites on the other hand, they are ready, and they are absolutely ripe (excuse the cheap pun) for the picking.

 

Ingredients

2 x Overly ripe Bananas
1 x Cup of Steel Cut Oats (or whatever is in the cupboard)
1 x Tsp. of Cinnamon
1 X Heaped Tbsp. of Chai Seeds
2 x Heaped Tbsp. of sultanas (or a dried fruit of your choosing)

Method

There is no fancy bits of equipment. For this recipe dump all you need is a folk, a bowl, a spoon and a baking sheet. Simples.

Mash the banana, add in the other ingredients. Mix everything together well. Take a Tbsp. of the mixture and lay it on a lined baking sheet and press down slightly with the back of the spoon. I tend to use baking parchment to line my tins, it makes the cleaning up easier and it means nothing sticks to the baking sheet.

Bake for around 15-20 mins on the top setting until the little bites are a lovely golden colour just on the edges. These will be like lava when you pull them out of the oven, so the hardest part about this haul is the waiting to test. I’d give it 30 mins until they are fully cooled.

In my 30 min wait, Demon Dog and I went a walking. And bless my stars he was naughty today on his walk. He practically dragged me all the way to the field. Once we were there and he ran out the overwhelming bout of brimming energy, he was fine. Well, fine until he decided to walk through some other dogs offerings. He’s not the brightest bulb in the tanning bed sometimes. After our walk, Demon Dog joined me in the kitchen for round two of experiments. With Bella cat sat on my shoulders, Dog was rolling around and somehow managed to get banana in his fur, like I said… not the brightest bulb. He’s currently laying belly up on the sofa with his head cocked and hanging over the side. Strange creature.

Completely off the subject of bananas; I’ve been subjected, this last week, to the act of back stabbing. In my head this is a setback. A brilliant form of torture for a woman who suffers with manic depression and anxiety, but maybe this whole thing is just paranoia. So here it is, a summary, a paranoid account. But then everyone is out to get me anyway, so weather any truth rings here or not I will never know.

Trusting someone with a personal sum of information. Important to me. They took my information and shared it with others. It wasn’t expected and Im finding it hard to come to terms with really. That information was with me, it should have been my choice to share or not. Stubborn, Virgo and always right; this was my choice and I don’t take very kindly to having things taken away from me when it was mine alone to deal with.

I’m struggling to come to a conclusion on the whole thing. I know personally it takes me a long time to trust anyone just because of my experiences and what life has taught me up to press. Trust is earnt. People tend to do just enough to get you on side, share enough of their experiences to make you feel as though they trust you. In turn you must trust them. Then you put your trust in someone, they find a way to surprise you, and convince you that you shouldn’t have trusted them in the first place.

Feeling betrayed and now licking the wounds, it’s back to the drawing board to re-evaluate. Just to work out how to move forward from this. Back to playing my cards close to my chest I think. To forgive, but not to forget. Maybe it’s my own fault for having a little faith in humanity, and trusting the wrong person. That mistake will not be happening again, and all further conversations will be monitored and filtered appropriately. Not a great way to start my year of positivity.

A minor setback in the grand scheme of things. This will not defeat me and MY year. Here’s to goal setting, smashing and the success that follows.
